Barbacoa is a term used to describe the preparation of meat (sheep, goat or beef) that is steam cooked in an underground oven. Today the term can include slow cooking meats on the stove or slow cooker. Our Slow Cooker Barbacoa Beef recipe is an easy dish to make, and it delivers big flavors! We use smoky chipotles, cumin and oregano to flavor this shredded beef dish for your tacos, nachos or burritos!

4 pounds chuck roast, cut into large cubes
4 garlic cloves, minced
2 teaspoons salt
1 teaspoon black pepper
2 teaspoons cumin
1.5 teaspoons Mexican oregano
1 bay leaf
2 canned chipotle pepper
1 tablespoon adobo sauce from chipotle pepper can
1 cup beef broth
Fresh chopped cilantro


1. Place the meat in the slow cooker.
2. Add garlic, salt, pepper, cumin, oregano, bay leaf, chipotle, adobo sauce and beef broth.
3. Stir to combine.
4. Cook on low for 8-hours or on high for 4-hours.
5. Shred the meat, remove the bay leaf and top with cilantro.
